Who We Are

Hello!

Some cafés exist to caffeinate you. We exist to slow you down.

Capy Café started with a phin filter and a stubborn belief that coffee deserves more than a 30-second shot pulled in a hurry. The Vietnamese phin isn't fast. It drips at its own pace, extracts every note it's got, and refuses to be rushed. We fell in love with that.

We brought that same philosophy to matcha — sourcing ceremonial-grade, not the dusty stuff that turns grey in milk. If it's going in your cup, it has to be the real thing. That's not a premium upsell. That's just the standard.

Folsom didn't have a place like this. So we built one.

Capy Café is named after the capybara — the most unbothered animal on the planet. Beloved by everyone, stressed by nothing, weirdly at home in any situation. That's the energy we're bringing to every cup. No rush. No filler. Just something made with actual care.

Come in slow. Leave better.

Our Mission

We're on a mission to ruin fast coffee for you forever.

Not sorry.

At Capy Café, we brew Vietnamese phin the slow way, source ceremonial matcha that actually tastes like matcha, and refuse to cut corners even when the line is long. Every cup is made with the kind of care that makes you wonder why you ever settled for anything less.

But honestly? The coffee is just the excuse to show up.

Capy Café was built for Folsom — the people who live here, work here, and actually give a damn about this place. We wanted somewhere you could slow down without feeling like you're wasting time. Somewhere the barista knows your order and your neighbor steals the good seat by the window. A third place that actually feels like one.
